I just made Alissa Cohen's Cucumber Dip from her book "Living on Live Food" and it is fantastic! It only takes a minute to whip up and can be used as a dip for just about anything. The combination of cashews, avocado and cucumber makes it so creamy and delicious, I can't wait to make this one again!
